How to Store Ajwain: Seeds and Powder

A highly aromatic small seed, ajwain quickly loses its bite once ground. Here are the simple habits that preserve its thyme-like scent the longest.

Whole ajwain seeds keep in an airtight jar or pouch, away from light and heat: they retain most of their thyme-like scent for 2 to 3 years. Already-ground powder, more exposed to air, loses its characteristic bite in as little as 6 to 12 months.

Why does powder lose its bite so fast?

Once the seeds are crushed, thymol and the other volatile compounds behind ajwain's powerful scent evaporate quickly on contact with air. Three precautions limit this loss:

  • Airtight container, glass or opaque metal, closed after every use;
  • Grinding at the last moment, with a spice grinder, rather than powder bought already ground long ago;
  • Temperate cupboard, away from any heat or moisture source (never near the sink or stove).

Should ajwain be refrigerated?

No, that is not necessary and can even be counterproductive: as with most dried spices, moving from the refrigerator to room temperature creates condensation upon opening, which encourages unwanted moisture. A temperate cupboard, away from light, remains the best option.
