How to Store Aloe Vera: Gel, Powder and Juice

Fresh gel cut from an aloe vera leaf keeps for only a few days refrigerated, in an airtight container: its clear pulp oxidizes and loses its properties quickly once exposed to air. Freeze-dried powder, more stable, keeps for 6 to 12 months away from light and moisture. Commercial juice, once opened, should be refrigerated and used by the date given by the manufacturer, generally within 3 to 4 weeks.

Why is fresh gel so fragile?

Once the leaf is cut, the clear pulp is exposed to oxidation and microbial growth far faster than a dried powder. Three simple precautions limit this:

• Airtight container in the fridge, never at room temperature;
• Small batches, prepared for use within 2 to 3 days;
• Careful rinsing of the yellow latex layer before storage, which also speeds up degradation if left in contact with the gel.
