How to Store Black Pepper: Peppercorns and Powder

Whole black peppercorns keep in an airtight jar or pouch, away from light and moisture: their hard outer shell protects them well, for 2 to 3 years with no major loss of bite. Already-ground powder, far more exposed to air, loses its woody aroma and bite much faster: expect 6 to 12 months after opening in an opaque, airtight container, away from heat.

Why does powder lose its bite faster than the peppercorn?
Grinding instantly releases the volatile essential oils held inside the peppercorn's shell, which then gradually evaporate on contact with air. Three simple precautions limit this loss:
- Airtight container, glass or opaque metal, closed after each use;
- Mechanical grinder to grind the peppercorn just before use, rather than buying pre-ground powder;
- Temperate cupboard, away from heat or moisture, never above a stovetop.
