How to Store Clove: Whole, Ground and Oil

A small brown bud, slightly oily, fragrant powder, or a bottle of essential oil: clove keeps according to simple rules, with a sharp gap between whole and processed forms. Here are the habits that preserve its aromatic power longest.

Whole clove buds keep in an airtight jar or pouch, away from light and heat: an intact skin protects the essential oil inside well, over 2 to 3 years. Ground powder, more exposed to air, fades within a few months. Essential oil keeps separately, in its original tinted bottle, tightly closed, away from direct light.

Why does the whole bud keep so well?

The closed structure of the dried flower bud naturally protects the essential oil it contains (rich in eugenol) from oxidation in open air, unlike already-ground powder whose exposed surface is far larger. Three simple precautions extend this good shelf life:

  • Airtight container, glass or metal, closed after each use;
  • Grind at the last moment if possible, rather than buying powder already ground;
  • Temperate cupboard, away from a heat or humidity source (never near the sink or stove).

What research documents about storing herbal powders

A 2016 study by Sharma, Kabra, Kabra and Baghel, published in the Journal of Ayurveda and Integrative Medicine (see the study on Google Scholar), shows that dried medicinal-plant powders degrade progressively depending on storage conditions — light, humidity and temperature mattering more than the mere passage of time. For clove, this confirms the value of favoring the whole form and grinding only a small amount at a time.

These benchmarks remain indicative: an aged bud is not dangerous, but a brittle bud or scentless powder has lost most of its culinary value.

Should you refrigerate clove?

No, this is not necessary for the whole bud or the powder: as with most dried spices, moving from the refrigerator to room temperature creates condensation on opening, which encourages unwanted humidity. A temperate cupboard, away from light, remains the best option. The essential oil, meanwhile, keeps at a stable room temperature, never in the refrigerator.

Precautions

Poorly stored clove mainly loses aromatic power, which is not in itself the primary safety concern for this spice.
