How to Store Amla: Powder, Juice and Jam

Amla’s vitamin C is fragile: storage matters even more here than for other herbs. Here are the habits that best preserve its quality, whether powder, juice or jam.

Amla powder keeps best in an opaque, airtight jar, away from light and heat, both of which speed up the breakdown of its vitamin C. Amla juice, once opened, should be refrigerated and used up quickly. Amla jam or chyawanprash, both high in sugar, keep longer thanks to that natural preservative effect. Properly stored, the powder keeps its qualities for 6 to 12 months.

Why vitamin C makes amla especially sensitive

Amla is prized above all for its high vitamin C content, a notoriously unstable compound: it degrades with light, heat and prolonged air exposure. Poorly stored amla powder therefore loses part of its main appeal faster than herbs valued for sturdier compounds. Three precautions limit this loss:

  • An opaque, airtight container, in tinted glass or metal, never a clear bag left in view;
  • A cool, dry cupboard, away from any heat source;
  • Closing it promptly after each use, to limit air contact time.

What research documents about storing herb powders

A study by Sharma, Kabra, Kabra and Baghel (2016), published in the Journal of Ayurveda and Integrative Medicine (see the study on Google Scholar), shows that dried medicinal-herb powders degrade progressively depending on storage conditions — light, humidity and temperature mattering more than the simple passage of time. For amla, whose main asset (vitamin C) is especially unstable, these storage rules matter even more than for other herbs.

These benchmarks stay indicative: aged amla is not necessarily dangerous, but a powder that has lost its characteristic tartness has mainly lost the vitamin C that justifies its use.

Should amla powder be refrigerated?

It is not necessary for a powder properly kept in an opaque, airtight jar. Juice, on the other hand, must be refrigerated once opened, like any fruit juice with no added preservative, given the risk of microbial contamination documented in some poorly controlled artisanal products.

Precautions

Poorly stored amla mainly loses vitamin C content, which reduces its value without being dangerous in itself — except for contaminated juice, which should be discarded if it smells or looks unusual.
