How to Store Black Seed: Seeds, Powder and Oil

Whole seeds, already-ground powder or cold-pressed oil: the three forms of black seed do not keep the same way. Here is how to preserve its peppery-anise aroma the longest.

Whole black seeds keep best: in an airtight jar, away from light, they retain their peppery-anise aroma for one to two years. Already-ground powder loses its aroma faster, generally within 12 to 18 months. Cold-pressed oil is the most fragile: refrigerate it once opened to protect its fatty acids from oxidation.

Why do powder and oil lose their qualities faster than whole seeds?

Once the seeds are ground or pressed, the surface exposed to air increases considerably, which speeds up oxidation of the aromatic and active compounds, including thymoquinone. Three precautions limit this loss:

  • Airtight container, in glass or opaque metal, closed after every use;
  • Buying in small quantities, restocked regularly, rather than a large bag opened for months on end;
  • Away from light, heat and moisture, in a dry, temperate cupboard for seeds and powder, refrigerated for opened oil.

What the research says about storing herbal powders

A study by Sharma, Kabra, Kabra and Baghel (2016), published in the Journal of Ayurveda and Integrative Medicine (see the study on Google Scholar), shows that dried medicinal plant powders degrade according to storage conditions, with light, humidity and temperature mattering more than the mere passage of time. For black seed, this confirms the value of favoring whole seeds when possible, which are more stable, and of checking the purchase date on already-ground powder.

Should black seeds be refrigerated?

No, not necessary: a dry, temperate cupboard, away from direct light, is enough for seeds and powder. Only opened oil truly benefits from cold storage, which slows the oxidation of its unsaturated fatty acids, more sensitive to heat than the compounds in whole seeds.
