Pink Himalayan Salt (Saindhava) vs Table Salt: The Real Difference

Pink salt labels sometimes claim "84 minerals." A full analysis of its composition shows what that really means — and why Ayurvedic tradition recommends it for other reasons.

Chemically, pink Himalayan salt and ordinary table salt resemble each other far more than marketing suggests: both are 97-98% sodium chloride. The remainder, a few percent, consists of trace minerals (iron, calcium, magnesium, potassium…) responsible for the pink hue but present in amounts far too small to represent a meaningful nutritional contribution. The real nutritional difference between the two salts is therefore negligible — which takes nothing away from the value of saindhava lavana, the unrefined rock salt Ayurvedic tradition recommends, but for reasons different from those Western marketing puts forward.

Saindhava lavana, a salt apart in Ayurvedic tradition

Among the five salts traditionally recognized in Ayurveda, saindhava lavana (literally "salt of the Sindh region") is considered the mildest and best tolerated, the only one recommended for daily use even with sensitive digestion, in kitchari as much as in golden milk or during fasting. Unrefined and untreated, it retains its raw crystalline structure — a trait tradition links to better digestive tolerance, independent of its color or precise geographic origin.

What mineral analysis of commercial pink salt shows

A study by Fayet-Moore, Wibisono, Carr, Duve, Petocz, Lancaster, McMillan, Marshall and Blumfield, published in 2020 in the journal Foods (vol. 9, no. 10, article 1490) (see the study on Google Scholar), analyzed the mineral composition of pink salts sold in Australia. Result: a sodium chloride content close to 97-98%, consistent with ordinary table salt, and trace minerals (iron, calcium, magnesium, potassium, among others) real but present in amounts far too small to represent a meaningful nutritional contribution at reasonable dietary intake. To get a useful magnesium or potassium contribution from this salt alone, you would need amounts far beyond what is compatible with a healthy diet, given the accompanying sodium load.

Why Ayurvedic tradition still prefers it

The traditional logic does not rest on a "miracle mineral" claim, but on other criteria: an unrefined salt, free of anti-caking agents or additives, considered less tamasic (in the sense of the gunas, the fundamental qualities of matter) than heavily processed industrial table salt. It is a difference in food-processing philosophy, consistent with the principles laid out in our six tastes (rasa) guide, rather than a measurable nutritional difference in the modern scientific sense. Presenting pink salt as a significant mineral source would, conversely, be misleading.

Should you still choose an unrefined salt?

It is a reasonable choice for anyone wanting to limit ultra-processed products and follow the Ayurvedic logic of dietary simplicity, without expecting a notable mineral benefit. What really matters for health remains the total sodium intake, far more than the color or origin of the chosen salt.

Precautions

Whichever salt you choose, pink or white, excess sodium intake stays associated with a higher risk of high blood pressure in salt-sensitive individuals: a salt's color or "natural" origin changes nothing about this physiological reality. People following a low-sodium diet on medical advice (hypertension, kidney disease, heart failure) should limit their total salt intake regardless of its form, and follow their doctor's recommendations rather than a seemingly "healthier" salt choice. Unenriched pink salt generally contains no added iodine: in regions where diets depend on iodized salt for this intake, exclusive use is worth discussing with a healthcare professional.
