Vata at the table: the five principles
Vata combines the qualities of air and ether: cold, dry, light, mobile, irregular. Tradition balances it with the opposite qualities. At the table, that gives five simple principles.
- Warm rather than cold. Cooked dishes, warm or hot drinks. Raw and iced foods are the first to cut back when Vata runs high.
- Unctuous rather than dry. A little ghee or sesame oil in every dish; soups, stews and porridges rather than crispbreads, crackers and puffed rice cakes.
- Sweet, sour and salty tastes. Cooked grains, root vegetables, ripe fruit, a squeeze of lemon, normal amounts of salt. Less bitter, strongly pungent and astringent food (bitter raw greens, coffee, poorly cooked legumes).
- Regular. Meals at set times: for Vata, regularity matters as much as what is on the plate. Skipping a meal unsettles Vata more than the other profiles.
- Gently spiced. Ginger, cumin, cinnamon, cardamom, fennel, a little pepper: spices that warm without burning.

Should I ban the foods on the “limit” lists?
No. “Limit” means less often, in smaller amounts, well prepared or balanced with spices. No food is forbidden, and a varied diet remains the priority.
